Compact Potato Flakes Production Line


Product Information

Potato flakes are flat chunks of dehydrated mashed potatoes. Potatoes are cooked and mashed, then crushed by rollers on the surface of a drum. The mashed potato is fast-dried until its humidity reaches the desired level, and then the layer of dried, mashed potato is scraped from the drum. This sheet is broken up by a mill sifter, and the resulting flakes are then packed.

In India, potato flakes demand is largely from the Indian snack manufacturers to make Aloo Bhujiya a favorite snack of the Indian Market.

Customer’s Requirement

Capacity: The Customer requirement was a 1200 Kg/hr flake line of two drums producing 600 kgs/hr each. The customer being new in the field started with a single drum of 600 kgs/hr with the provision to expand another 600 kgs/hr.

Compact size: The customer had an existing land parcel with limited space and with the engineering capability the line had to be engineered to fit into 20% less space.

Special Features of Tummers Processing Line:

Destoner/Washer: High efficient separation of stones (parts with a higher specific density), separation of the leaves and threads with a floating part remover, and frequent flushing of dirty water are key features of the Tummers Washer/Destoner.

Steam Peeler: Tummers incorporated the most efficient steam peeler in the market and used widely in the potato industry from Tomra.

Dry Peel Remover: The Dry-Peel-Remover (ZicZac Brusher) from Tummers is used to get rid of the peel without using water. The ZicZac Brusher is so gentle that it will take off an absolute minimum of good potato flesh (minimum of peel loss). The combination of Tomra peeler and Tummers ZicZac dry peel remover gives fewer peel losses.

Ricer: A well-controlled mixing of additives and mash-making to avoid the additives becoming dissolved. The mash conveying is by a pump system to make the layout more flexible and has a more hygienic conveying system compared with screw conveyors. The clearance between the screw and screw body will get a thin layer of mash making the screw dirty and which will break out all of a sudden and degrade the quality of the flakes.

Drum Dryer: The drum dryer will create a more stable flake as explained above. The wind shifter after the pre-breaker will separate hard/double pieces which will not follow the good flakes to the Mill-Sifter.

Air Transport: Air transport from the wind shifter to the Mill-sifter will make the layout flexible but also take the last evaporating moisture away because the product is cooling down herein as well.

Mill Shifter: The mill-sifter breaks the rough flakes into standard flakes of 5-6 mm in a gentle way without creating too much dust (fine powder). At the end of the Mill-Sifter, the last separation of hard pieces will be done by an open outlet. This, the wind-sifter, air-transport, and the last roller of the drum dryer makes a minimum of black spots and peels rest in the final product. Therefore flakes are of higher spec than the competitor.

Powder Mill: The powder mill will break the flakes into powder creating a higher density of the flakes. Since most of the black spots and peel rest are already out the powder mill does not break too many black spots into more black spots. The powder mill can be bypassed to have the choice of standard flakes or powdered flakes.

Outcome

Benefits of using Steam peeler Vs. Abrasive Peeling: Abrasive peeling will create more peel loss (skin and good potato flesh) compared with steam peeling. Steam Peel Loss early in the season can be 7% and at the end of the season 14% (depending on storage circumstances too) whereas Abrasive Peel Loss can be 9% but easily 25-30% as well to get rid of all the skin. With the help of steam, peeler customers could save a lot of potato flesh.

Cost Saving: By locally producing components as per the Tummers design we were able to meet the customer demand at slightly lower costs by providing the same superior technology. This enabled the customer to gain a quicker payback.

Small footprint: As we were able to fix the line in a lesser space (Zig zag Line), we could save a lot in terms of land requirement.

Performance of the line: The customer is so happy with the line performance that they are planning for a second line with a higher capacity drum and to increase their production to 2400 kgs/hr.
